We’ve worked hard to create a pizza base that’s soft, light and easy to digest, yet convenient to enjoy at home. Today, we can finally tell you how it’s made and why we’re so proud of it.
From this research comes Salè, the new savoury line by Infermentum: a project that gives a dedicated identity to our savoury creations and will bring many innovations in the coming years. The first stars of Salè are Pizza Pala and Pizza Teglia, now available with a renewed pack and a new logo that best express our vision.

The First Salè Pizzas

Pizza Teglia (2 bases, 330 g each): thicker, baked in a tray, perfect to fill like a sandwich.
Pizza Pala (2 bases, 250 g each): hand-stretched into its classic elongated shape, ideal for topping on the surface.
These are Salè by Infermentum pizza bases, ready to top and reheat in the oven — designed to enhance the ingredients you’ll add.

The Dough According to Salè

Each Salè pizza by Infermentum is born from the perfect balance between sourdough and brewer’s yeast: the aromatic complexity of the first combines with the fermentative strength of the second, resulting in a rich-tasting pizza with a beautiful open crumb and surprising digestibility.
This is also thanks to the high hydration (75%) and an entirely manual process that follows slow rhythms and precise gestures: pre-shaping, shaping and packaging are all done by hand.

No Rush, No Preservatives

Salè pizza bases are hand-packaged in our workshop without preservatives, using special technology that absorbs oxygen and humidity.
This allows them to be stored at room temperature for 50 days, without refrigeration. After opening, we recommend sealing them carefully, storing in the fridge and consuming within three days.

Don’t Call It “Pinsa”

Even if it may look similar, our pizza is not a pinsa.
Salè pizzas by Infermentum do not use the classic mix of flours (soy, rice, wheat), but only selected wheat flour from Molino Dalla Giovanna, ideal for the long fermentation that defines all our products.

How to Enjoy It Best

Inside the package, you’ll find a guide with our tips for topping and reheating: just a few minutes in the oven are enough to restore the right fragrance and crispness. Then, have fun adding your favourite toppings!
