If you want to surprise your mom with an unforgettable dessert, you can combine the fluffiness of our Rose Cake with an enveloping Orange-scented Cream, to be made right at home.

Our Roses Cake recipe is a fragrant interpretation of those moments spent with family and friends among laughter, food and games. It has a soft dough due to natural leavening with sourdough made fragrant thanks to the softness of butter and the granularity of sugar.

Cristina, pastry chef at our Lab, was inspired by this cake and created a cream to match the delicate vanilla and orange paste notes of Rose Cake, enhancing the fluffiness of the dough.

Here is the recipe for making the cream at home:

Serves 8
500 g fresh milk
200 g fresh whipping cream
4 egg yolks
70 g granulated sugar
1 organic orange
40 g cornstarch (alternatively 20 g cornstarch and 20 g rice starch)

Heat the milk without coming to a boil and steep the orange peel for about 1 minute;
In a separate bowl, incorporate the sugar, egg yolks, starch and previously strained orange juice, stirring everything with a whisk until you get a smooth mixture;
Pour the milk (without the peel) into the 'emulsion of yolks and sugar taking care to stir immediately;
Transfer to a small saucepan and heat over low heat stirring constantly until boiling for about 1 minute;
Remove from heat and transfer to a bowl. Wait until completely cooled;
Whip the cream, which should be semi-whipped, and add it to the now cooled orange cream. Mix from 'top to bottom to make a fluffy, fluffy diplomatic cream;
Serve it together with the warm Rose Cake, with its crunchy crust and soft heart, and share it with your guests.
