When the Christmas time is near, one of the most common questions we receive in our artisanal bakery is, “What’s the difference between panettone and pandoro?” Both are iconic Italian holiday treats, much loved and often found on Christmas tables. But what makes them so different, despite their shared fame?

Panettone
Panettone has its roots in Milanese tradition and stands out for its rich, soft dough, achieved through a lengthy process using natural sourdough. This handmade italian dessert is traditionally enhanced with candied fruit and raisins, giving it a distinct taste and appearance. Its tall, domed shape and airy structure are testament to its perfect leavening. Pandoro
Originally from Verona, pandoro symbolizes pure softness. Unlike panettone, pandoro contains no candied fruit or raisins, and its sweetness is more subtle. Its star-shaped form with eight points makes it unmistakable, and it’s traditionally dusted with powdered sugar, evoking a snowy Christmas. Although we don’t produce traditional pandoro, Infermentum interprets this classic with Monte Nuvola, an incredibly soft leavened cake enriched with a marsala and white chocolate emulsion.

The real difference between artisanal panettone and pandoro lies in the process. Is Monte Nuvola Similar to Panettone Semplice?
While Monte Nuvola and Panettone Semplice (without candied fruit) might seem similar, they are quite different. Monte Nuvola is our take on pandoro, with specific qualities like delicate flavor and a much denser, sponge-like texture. In contrast, Panettone Semplice without candied fruit has a longer, denser structure with a stretchy dough, an intense aroma from essential orange and lemon oils, and a touch of white chocolate for structure.
